It’s Pancake Day today and I have therefore decided to send you a healthy alternative to the classic Shrove Tuesday treat!

This recipe will make enough pancakes for 2 hungry people!


2 small bananas

5-6 free range eggs

2 teaspoons of cocoa powder

1 tablespoon of coconut flour

1 sachet of stevia powder (this is a natural sweetener)

  1. Put all the ingredients above into a blender and blend until smooth
  2. Melt some coconut oil in a pan before adding the mixture
  3. Allow the mixture to spread out and cook for approx 5 minutes.
  4. Turn the pancake and cook for a further 2 minutes

Serving suggestions

I served my pancakes with full fat natural yoghurt, raspberries and blueberries – this was really delicious but you could add any sort of fruit.

Another good idea is to cook some apple in cinnamon and add this to the top of your pancake with natural yoghurt – delicious!!
